This bubbly mojito recipe is a slight tweak on the typical cocktail, but it makes an incredible summertime drink so much better! You can use sparkling wine in place of Champagne, if desired. Garnish with a mint sprig.
Ingredients
- 10 freshs mint leaves
- 2 teaspoons white sugar
- 2 fluids ounces white rum
- ½ lime , quartered
- 4 fluids ounces sparkling white wine
- 0.25 cups crushed ice

Place mint leaves and sugar in the bottom of a Collins glass; mash well with a cocktail muddler. Add rum and lime wedges to the glass; muddle. Top with sparkling wine and crushed ice.
