Cabbage steaks are one of my favorite vegetable side dishes, and they are very easy to make! This is a very simple recipe and you can put as much or as little of the seasonings you want. I personally love garlic so I go crazy with it, but put as much as is good for you.
Ingredients
- 1 head cabbage
- 2 tablespoons light olive oil
- 2 tablespoons minced garlic , or to taste
- 0.5 teaspoons salt , or to taste
- 0.5 teaspoons ground black pepper , or to taste

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C).

Cut the bottom off of the cabbage and set it so the flat end is on the cutting board; cut into 1-inch thick slices. Arrange slices in a single layer in a large sheet pan or casserole dish.

Drizzle oil over cabbage slices and sprinkle with garlic. Season cabbage with salt and pepper. Cover the pan or dish with aluminum foil.

Bake in the preheated oven until cabbage core is easily pierced with a fork, about 45 minutes.

Copycat Moon Pies
Inspired by the original MoonPie® cookies, this copycat version boasts tender, but slightly crisp graham cracker cookies flavored with the faintest bit of cinnamon, sandwiched around a sweet, chewy marshmallow filling, and dipped in a sweet chocolate glaze. Serve with ice cream or a glass of milk for dipping. Cookies can be stored covered at room temperature or in an airtight container in a refrigerator for up to a week, or frozen in an airtight container for up to 1 month.

Mama's Oh-So-Savory Lamb and Eggplant Casserole
The basis of this lamb and eggplant casserole recipe came from my 4th grade teacher's mother who was Armenian, and I've been making it for over 50 years. It is easy to put together, but the longer the stovetop step simmers, the better the casserole will be when served. The leftovers are yummy! You could serve this over rice, if you like, with a green salad. I just serve it in pasta bowls with crusty bread, butter, and a nice glass of red wine.
