Perfectly spicy Cajun deviled eggs, I gar-on-tee!
Ingredients
- 6 eggs
- 2 tablespoons mayonnaise
- 1 teaspoon prepared Dijon-style mustard
- 0.5 teaspoons salt , or to taste
- 0.25 teaspoons ground black pepper
- 0.25 teaspoons ground cayenne pepper

Place eggs in a medium saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, and peel.

Slice eggs in half lengthwise. Remove yolks and place in a medium bowl; set aside egg whites. Use a fork to mash egg yolks with mayonnaise, Dijon-style mustard, salt, and black pepper.

Fill hollowed egg white halves with yolk mixture. Sprinkle with cayenne pepper. Cover and chill in the refrigerator until serving.

Beef Salad Sandwich Filling
Like chicken salad, but with beef! A great way to use leftover roast beef or pulled beef. Even my kids like it, minus the onions. Chopping and mixing all the ingredients together in my manual food processor works really well and saves time. Serve on bread or in pita pockets.

Slow Cooker Chicken Chili with Greens and Beans
Beans, greens and chicken come together with tomatoes in a thick and creamy broth. This recipe, as with most chili recipes, doesn't need to be exact and can be altered to fit your taste or what you have on hand. The choice of greens is up to you - my first choice is kale, but you can use spinach, turnip greens, collards or a combination (my favorite)! If you use fresh greens, wash and chop them very fine before adding them to the slow cooker.
