Old-fashioned carrot Jell-O salad made with lemon and pineapple. Grandma didn't specify the amount of carrots. You probably can't use too much!
Ingredients
- 1 package lemon flavored Jell-O® mix , 6 ounce
- 1 can crushed pineapple , 20 ounce
- 4 large carrots , shredded

Gather the ingredients.

In a large bowl, prepare lemon gelatin according to package directions using reserved pineapple juice in place of some of the water. Refrigerate until thickened, about 1 hour.

When gelatin has thickened, stir in pineapple and shredded carrot.

Cover and refrigerate until set, at least 4 hours.

Here's a "low and slow" New Mexican chicken recipe inspired by Mexican carne adovada, featuring chicken thighs simmered in a deeply flavored chili sauce. Chicken is browned on one side only, for the Maillard reaction to add its flavors to the dish, and will finish cooking and take on a deep color as it simmers. Serve with soft corn tacos, crumbled cheese, cilantro, onion and lime slices. If you prefer other toppings, go ahead and enjoy them!
