This is not a low-fat recipe! But great if you love cheese! A lot like chicken Parmesan.
Ingredients
- 2 cans tomato sauce , 15 ounce
- 1 can tomato paste , 6 ounce
- 1 tablespoon white sugar
- 1 teaspoon dried parsley
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 medium garlic clove , chopped
- 3 pounds skinless , boneless chicken breast halves
- 1 cup fine dry bread crumbs
- 1 pound Cheddar cheese , shredded
- 1 pound mozzarella cheese , shredded
- 1 teaspoon garlic salt to taste
- salt and pepper to taste
Instructions
-
1
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking dish that is deep enough to allow at least one inch between the chicken and the top of the dish.
-
2
In a large pot over medium heat, stir together tomato sauce, tomato paste, sugar, parsley, basil, oregano, and garlic.
-
3
Meanwhile, in a large bowl, toss chicken with bread crumbs until completely covered. Arrange chicken in baking dish and sprinkle to taste with garlic salt and pepper to taste. Top chicken with half of shredded Cheddar and mozzarella cheeses. Pour tomato sauce evenly over chicken. Reserve half of the remaining Cheddar and mozzarella cheeses, and sprinkle the rest over the chicken and sauce.
-
4
Cover dish with aluminum foil and bake for about 50 minutes, or until chicken is cooked through. Remove foil, and top with remaining Cheddar and mozzarella cheeses. Return dish to oven and cook, uncovered, until the cheese on top melts. Remove pan from oven and let sit five minutes before serving.

Easy Shakshuka
This shakshuka recipe is an easy version of the popular Middle Eastern poached egg dish. I love shakshuka โ it's delicious, healthy, and makes a satisfying breakfast or brunch. I use canned tomatoes instead of fresh, which means I can make it whenever I want with ingredients from my pantry!
Menudo
This dish depends on how much of each ingredient you put in it. It just depends on how much you wish to make. This dish takes a while to prepare and to cook but it is worth it. The spices are always according to how hot or spicy you like your food. It tastes better on the second day. If you want to make more, increase the ingredients. If you want less, decrease the ingredients. I learned this on my own and my husband, who is Mexican, loves it. It will please the most avid Mexican food lover.
Matcha Pancakes
These matcha pancakes are a treat. We're strong believers in sleeping in and brunching on the weekends (we didn't work hard all week for nothing!), so it's only natural that we treat ourselves to one of our favorite brunch foods: the classic pancake. There's just something about stacks of fluffy, buttery breakfast cakes that make us feel like we're starting the morning off with dessert, especially if chocolate chips are inside. Happy brunching! Top with more white chocolate chips, honey, and butter, and enjoy.
