Mom's Cucumber Salad
This is the cucumber salad my mom made when I was small. It's deliciously creamy, sweet, and tangy at the same time. It's still one of my favorite summer salads!

The flavors of this side dish are intense! It is great as a starter to an Asian menu, or as a significant addition to a light stir-fry meal.
Muffin Pan Roasted Potato Wedges
These muffin pan roasted potato wedges are crispy on the outside, tender on the inside, and roasted in a muffin pan. There's very little cleanup—no aluminum-lined sheet pan and minimal mess. Feel free to experiment with using different herb blends.
