This salad is a great complement to the harvest season, boasting seasonal fruit and nut favorites: cherries, pears, and pecans.
Ingredients
- 0.25 cups balsamic vinegar
- 3 tablespoons cherry preserves
- 0.5 cups extra-virgin olive oil
- salt and ground black pepper to taste

Combine balsamic vinegar and cherry preserves for vinaigrette in a small bowl. Gradually whisk in olive oil until emulsified. Season with salt and pepper.

Toss mixed greens, pears, cherries, pecans, red onion, and vinaigrette in a large salad bowl.

Evenly distribute salad among four individual salad bowls and top with Gorgonzola cheese.

Colorado Green Chili (Chile Verde)
This Colorado green chili is my version of my mother's green chili. I like to serve it over oven-baked burritos or with beans and rice. If you can't find a chile roaster, look for frozen diced chiles at your supermarket. You can also freeze fresh roasted chiles for off-season use.
Beyond Beef Vegan Meatballs
These plant-based meatballs with spinach, nutritional yeast, and vegan bread crumbs deliver lots of flavor. We like more of a crunchy, dry meatball so these are baked in the oven without sauce but they can be simmered on the stovetop in marinara sauce, as well. Store cooked meatballs in an airtight container in the freezer for up to 2 months.
