I am not normally a cupcake fan, but this is my favorite cupcake recipe! I have made it over and over and people love it.
Ingredients
- 1 package chocolate cake mix , 18.25 ounce
- 1.25 cups water
- 4 eggs , divided
- 0.5 cups oil
- 1 package cream cheese , 8 ounce
- 0.67 cups white sugar
- 0.75 teaspoons Mexican vanilla extract
- 0.75 cups miniature chocolate chips , or more to taste, divided
- 1 container cream cheese frosting , 16 ounce

Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.

Combine cake mix, water, 3 eggs, and oil together in a bowl using an electric mixer until batter is smooth, about 2 minutes. Spoon batter into the prepared muffin cups.

Blend cream cheese, sugar, 1 egg, and vanilla extract together in a blender until cheesecake filling is smooth; stir in 1/2 cup chocolate chips. Spoon about 1 tablespoon cheesecake filling into each cupcake.

Bake in the preheated oven until a toothpick inserted into a cupcake comes out clean, about 25 minutes. Cool cupcakes on a wire rack.

Frost each cupcake with cream cheese frosting and sprinkle remaining chocolate chips over each cupcake.

Grandma's Old-Fashioned Yeast Rolls
This recipe is one of our family traditions. We don't know how old it is, but it is at least Depression Era (no milk, no eggs). It was handed down from my Grandma Pearl Nash. She never wrote down the recipe, always measured by memory and her hands. She developed breast cancer in the early 60's and shortly before she died. My Daddy asked her to measure out all the ingredients so the recipe would not be lost. He carried her into the kitchen, where she carefully placed the ingredients on newsprint paper. My mama (who my kids called Tutu) shifted the ingredients into measuring cups and spoons to record the amounts.
