These chocolate chip meringue cookies bring back good childhood memories and are a nice change from regular chocolate chip cookies. Great for any occasion.
Ingredients
- 3 large egg whites
- 1 cup white sugar
- 0.5 teaspoons distilled white vinegar
- 0.5 teaspoons vanilla extract
- 1 pinch salt
- 2 cups semisweet chocolate chips

Preheat the oven to 300 degrees F (150 degrees C). Grease baking sheets or line them with parchment paper.

Whip egg whites in a clean mixing bowl to soft peaks. Gradually add sugar, vinegar, vanilla, and salt while whipping to stiff peaks. Fold in chocolate chips. Drop by spoonfuls onto the prepared cookie sheets.

Bake in the preheated oven until cookies are dry, 20 to 25 minutes.

Beef Salad Sandwich Filling
Like chicken salad, but with beef! A great way to use leftover roast beef or pulled beef. Even my kids like it, minus the onions. Chopping and mixing all the ingredients together in my manual food processor works really well and saves time. Serve on bread or in pita pockets.

Hawaiian Iced Tea
I first tasted this tea in a popular Italian restaurant in my college hometown of Kailua. I have been craving it ever since, and have experimented with a few proportions. Add more tea leaves for a stronger tea, but do not steep longer or the tea will end up tasting bitter. (If it does, add a pinch of baking soda.) Always make something to your liking! This is also great to serve at showers.
