This creamy coconut ice cream gets its rich coconut flavor from sweetened cream of coconut. I also like to add flaked coconut to make a sweet homemade treat that any coconut lover will enjoy!
Ingredients
- 1 can sweetened cream of coconut , 14 ounce
- 1 cup milk
- 1.5 cups heavy cream
- 1.5 cups sweetened flaked coconut , Optional

Gather all ingredients.

Combine cream of coconut and milk in a food processor or blender; mix thoroughly. Stir in cream and flaked coconut (if using) until combined.

Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 25 minutes. Transfer ice cream to an airtight container and freeze until firm or desired consistency.

Rhubarb Pineapple Chutney
This is a great way to use rhubarb and goes really well with pork. Also yummy on crostini with goat cheese; simply brush sliced baguette with olive oil and bake at 400 degrees F until golden brown, spread with goat cheese, and top with the chutney. Delicious! Another great use for the rhubarb chutney is as a topping for pork chops. Season chops (or pork tenderloin) with a mixture of even parts cumin, coriander, garlic powder, and salt, plus a sprinkle of cayenne; grill, then serve with the chutney. It gets raves every time!
