I made this colorful kale and spinach salad and homemade dressing because of my husband. He wanted kale in a salad. The rest of the veggies I just happened to have on hand. It became an instant favorite to my husband. Hope you enjoy it as he does!!! You could also use distilled vinegar instead of balsamic. Tweak it to your liking and have fun with it.

Grilled Chicken and Artichoke Soup
This zesty soup is perfect for a cold, blustery day. Use rotisserie chicken instead of chicken breasts to make things simpler if you like. Serve this hot with some fresh garlic bread for the perfect meal.
Empanadas Fritas de Queso
These empanadas use queso chanco, but a good substitute is a mixture of Swiss and Havarti. I usually bake mine, but they are really good fried. I serve these with a chile-Chile sauce.
Ooey Gooey Carrot Butter Cake
This ooey gooey carrot butter cake hits somewhere between a carrot cake, a chess bar, and a cheesecake. It has crisp sugary edges, a gooey interior, and a soft cookie-like crust which makes the cake extra scrumptious.
