Southern Potato Salad
This Southern potato salad recipe combines warm chunks of tender potato with hard-boiled eggs, crunchy celery, mustard, and relish for an old-fashioned classic. This salad tastes best served warm.
Brazo Gitano de Guayaba (Jelly Roll with Guava)
Recipe I've had for over 25 years. In Puerto Rico, the brazo gitano made by Franco in Mayaguez is a favorite. This homemade version may not be an exact duplicate but it is just as good or better, in my opinion. Mix and match the fillings to your taste. Cream cheese along with the fruit of your choice is a favorite of many.
Zucchini Salad with Herbs and Red Onion
A lovely, herb salad recipe with thin slices of zucchini, red onion, fresh mint, and basil. Use a spiralizer or a potato peeler to slice the zucchini as thin as possible. I like to blanch the red onion, but it's not completely necessary.
