An exciting, cool and refreshing side salad that goes great with grilled meat. Fantastic for get-togethers. You WILL be asked for the recipe! Reserve a piece of sliced tomato and a few cilantro sprigs for garnish.
Ingredients
- 3 cans whole kernel corn , 11 ounce
- 2 large tomatoes , diced
- 1 large sweet onions , cut into thin strips
- 4 greens onions , chopped
- 1 bunch cilantro leaves , minced into tiny strips
- 2 limes , juiced
- 0.33 cups rice vinegar
- kosher salt to taste

In a large bowl, combine the corn, tomatoes, sweet onion, green onion, and cilantro. Squeeze lime juice over mixture, and mix in. Stir in rice vinegar to taste; the amount you use will depend on the sweetness of the corn, and the acidity of the lime. Season with kosher salt.

Cover, and chill for 45 minutes to an hour. Stir before serving.

The transliteration of gising-gising from Filipino to English is "wake up-wake up." Ideally, this vegetable dish recipe should be spicy enough to wake you up if you're feeling sluggish. You can use other kinds of vegetables like string beans or river spinach (kangkong), but I like to use winged beans (sigarilyas) because of their unusual shape. Best served with steamed white rice and tinapa (smoked fish).
