This corned beef roast is easy to prepare for the oven and wonderful to eat. Plan to roast for about one hour per pound.
Ingredients
- 1 corned beef brisket with spice packet , 5 1/2 pound
- 7 small potatoes , peeled and diced
- 4 medium carrots , peeled and diced
- 1 medium onion , diced
- 3 cloves garlic , chopped

Preheat the oven to 300 degrees F (150 degrees C).

Place corned beef brisket in the center of a roasting pan. Arrange potatoes and carrots around the sides, then scatter onion and garlic over top. Sprinkle seasoning packet over beef, then pour in water until potatoes are almost covered. Cover with a lid or heavy aluminum foil.

Roast in the preheated oven until corned beef is so tender it can be flaked apart with a fork, about 5 to 6 hours.

Everything Challah
Challah is traditionally eaten on the Jewish Sabbath (Shabbos). This is not your average challah recipe. It is a twist on my trusty old water challah recipe (which even water-challah-phobics have loved), and has some of the taste of an everything bagel. It's really something else. Enjoy! This challah freezes extremely well after baking, just defrost in a ziplock bag with the zipper open. I always freeze it, even what I bake on Thursday nights for use on Friday! It preserves the freshness so well.
Country Fried Squash
This fried squash recipe was my grandmother's and it actually won a Blue Ribbon at the Tennessee State Fair! Be sure to use fresh squash, I use butternut but other squash like yellow squash or zucchini would also be good.
