This zucchini fries recipe is easy to follow for golden, crispy, and perfectly seasoned zucchini! Line your baking sheet with foil for easy clean-up.
Ingredients
- 0.75 cups Italian seasoned bread crumbs
- 0.25 cups grated Parmesan cheese
- 0.25 teaspoons seasoned salt
- 1 zucchini , 9 inch
- 0.25 cups butter , melted
Instructions
-
1
Gather the ingredients. Preheat an oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper or aluminum foil lightly greased with cooking spray.
-
2
Cut the peeled zucchini in half lengthwise and remove the seeds. Slice the zucchini into 1/2 x 1/2 x 4-inch pieces.
-
3
Combine bread crumbs, cheese, and seasoned salt in a deep plate. Dip the zucchini strips into the melted butter, then press into bread crumbs. Gently toss between your hands so any bread crumbs that haven't stuck can fall away. Place the breaded zucchini onto the prepared baking sheet.
-
4
Bake the zucchini in the preheated oven until the fries are golden and tender, about 15 minutes.
-
5
Serve and enjoy.

Italian Easter Cookies (Biscotti)
This Italian Easter cookies (biscotti) recipe belonged to my Italian grandmother. She made these cookies every Easter, and I've since picked up where she left off and now make these cookies as part of our Easter tradition. I love the anise flavoring, but you can substitute almond extract and they're just as good. This is my favorite cookie to dip in coffee.
Grilled Jalapeño Poppers
These grilled jalapeño poppers are the best! They're stuffed with a creamy cheese filling, wrapped in bacon, and cooked until the jalapeños are tender and the bacon is crispy.
Slow Cooker Pheasant with Mushrooms and Olives
Pheasant recipes—especially good ones—are very hard to find! This slow cooker version with mushrooms and olives results in a moist, tender, and delicious pheasant that even my kids will gobble up. It's adapted from a recipe a friend passed on to me.
