This delicious cucumber avocado salad is simply dressed with fresh lime juice for a crowd-pleasing summer salad full of fresh flavors.
Ingredients
- 2 medium cucumbers , cubed
- 2 avocados , cubed
- 4 tablespoons chopped fresh cilantro
- 1 clove garlic , minced
- 2 tablespoons minced green onions , Optional
- 0.25 teaspoons salt
- black pepper to taste
- 1 lime , juiced
- 1 tablespoon lemon juice or to taste

Combine cucumbers, avocados, and cilantro in a large bowl; stir in garlic, green onions, salt, and pepper. Pour lemon and lime juice over the top; toss well. For best flavor results, cover and refrigerate the salad until chilled before serving.

This is a great recipe for any meat marinade. Also a wonderful stir fry sauce. Marinate your choice of meat or vegetables for 4 to 24 hours; grill to your liking. Can be refrigerated for 2 weeks. The better quality soy sauce you use, the better your final product will be. Sauce can always be thinned with water if desired.
