Easy, bite-sized cookies with cheesecake filling. They are so good and so fast and easy to make. Fun recipe to make with your kids. My 3-year-old and I always make these together!
Ingredients
- 1 cup all-purpose flour
- 1 package graham crackers , 4.8 ounce
- 1.5 teaspoons baking powder
- 1 stick unsalted butter , softened
- 0.5 cups brown sugar
- 1 large egg , divided
- 0.33 cups cream cheese , softened
- 0.25 cups white sugar
- 1 teaspoon vanilla extract

Preheat the oven to 350 degrees F (175 degrees C). Grease a baking sheet.

Combine flour, crushed graham crackers, and baking powder in a bowl.

Beat butter, brown sugar, and egg white together in a separate bowl with an electric mixer until creamy. Add to the dry ingredients and mix until moist.

Combine cream cheese, sugar, and egg yolk in another bowl; beat until creamy.

Use a small ice cream scoop to scoop cookie batter onto the prepared baking sheet. Press a little pocket into the center of each cookie with a small spoon. Add equal amounts of cream cheese filling to each pocket.

Bake in the preheated oven until edges are golden, about 12 minutes. Remove from the oven and let cool before removing from the baking sheet.

I lived in Germany when I was little and I continue to love German desserts. Black Forest Cake is one of my faves, only I Americanized it and made it more amazing! I took my mom's great chocolate cake and added to it to create this masterpiece which recently took first place in the cake division of our city bake-off. My husband took the leftovers to a Chemistry Society meeting and they said that it was amazing and he didn't bring any back home with him. I hope you enjoy it just as much as those judges and those crazy chemists.
