This simple, tasty recipe yields 12 to 16 cookies, but is so simple that it can be doubled (or tripled!) easily.

- 1 cup peanut butter
- 0.5 cups white sugar
- 0.33 cups packed brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 0.5 teaspoons baking soda
- 0.5 cups semisweet chocolate chips , Optional

Preheat oven to 350 degrees F (175 degrees C).

Beat peanut butter, white sugar, and brown sugar together in a large bowl with an electric mixer until smooth. Stir egg, vanilla extract, and baking soda into peanut butter mixture; stir in chocolate chips.

Drop mixture by small rounded spoonfuls onto a baking sheet about 2 inches apart.

Bake in the preheated oven until cookies are flattened and golden, about 8 minutes.

Hearty Chicken Cacciatore Soup with Rice
Great in fall and winter, this delicious, hearty, full-flavored soup is teeming with tasty ingredients... tomatoes, chicken, vegetables, and a healthy body of rice. This is a family-favorite that I threw together. The full aroma will bring them in from outside before it's even done. Garnish with shredded Cheddar or mozzarella if desired.
Long Island Iced Tea
This is the classic Long Island Iced Tea, containing just a hint of citrus. It is best made with top shelf liquors. Watch out, it is very strong, but tastes very good, so you may not realize all the alcohol you're consuming.
Croque Madame on Brioche
A spin on the traditional French croque monsieur with deli ham, rich smoky cheese, béchamel, and eggs on brioche bread. Typically in France the eggs are fried but I prefer poached eggs topped with chives and smoked paprika. Optionally serve it with sliced plum tomatoes to make it a croque Provençal. This is my sweet angel's favorite dish that I prepare for her.
