I go to my local Mexican Market and buy "pollo para asar" which translates to "chicken to grill." This chicken is seasoned and ready to grill. These delicious tacos are easy to make and topped with cilantro and onions. I serve them with guacamole, salsa and fresh lime wedges on the side.
Ingredients
- 1 pound boneless , skinless chicken
- 1 onion , diced
- 0.5 cups cilantro
- 8 corns tortillas
Instructions
-
1
Preheat an outdoor grill for medium-high heat and lightly oil the grate.
-
2
Grill chicken, turning occasionally, until juices run clear and chicken is no longer pink at the center, about 7 minutes. An instant-read thermometer, inserted near the center, should read at least 165 degrees F (74 degrees C).
-
3
Heat corn tortillas until soft and pliable in the microwave, about 1 minute. Top with chicken, onions, and cilantro.

Easy Chicken Taquitos
Make taquitos, or rolled tacos, at home with this super easy recipe that uses canned or rotisserie chicken, cheese, and hot pepper sauce. The filling is easy to adjust — add sliced jalapeños if you prefer lots of heat. Bake until crisp and serve as an appetizer or side dish with your favorite salsa. You can also serve them as a main course topped with lettuce, tomato, olives, sour cream, and more.
One-Ingredient Sorbet
Make a healthy, no-added-sugar sorbet in mere minutes with this ingenious recipe! Use banana, strawberry, or a mixture of both! Get creative and use other frozen fruits, too.
Curly-Q Grilled Sausages
Giving a sausage a cool, coiled shape isn't just fun or frivolous; it's also fully functional. The extra surface area picks up additional delicious smoky, caramelized flavors from the grill. You could brush barbecue sauce on an un-helixed Italian sausage, but here you're literally flavoring the sausage inside and out. I served these curly-q grilled sausages on buns with homemade basil-garlic mayonnaise.
