Butternut Squash and Apple Cider Soup
I asked 2 chefs and researched other recipes to come up with the 'perfect' butternut squash and apple cider soup recipe. I love the sweet taste of squash and veggies combined with fall cider. Hope you enjoy it too!
New England Razor Clam Chowder
Thick New England clam chowder with razor clams. My family likes to harvest razor clams on the Washington coast. We clean and freeze our clams. You might be able to use canned clams. My husband likes thick clam chowder. If you do not want it as thick, omit the flour, and use milk instead of cream. Serve with bread and salad.
Chicken Parmesan Meatballs
Make ground chicken meatballs and coat them in seasoned Panko crumbs for a beautifully browned color. Use jarred sauce from the grocery store for a shortcut in this cheesy, satisfying dish! We like it with "zoodles," but fettuccine or spaghetti would be delicious! Garlic bread and a green salad are all you need to complete this meal.
