Gazpacho is a great cold soup to beat the summertime heat! This easy recipe blends ripe tomatoes, cucumber, garlic, and lemon juice to make a light and refreshing soup full of the season's best produce. Delicious served with a drizzle of olive oil and garnished with croutons and fresh herbs.
Ingredients
- 4 cups tomato juice
- 2 cups chopped tomatoes
- 1 small onion , minced
- 1 medium green bell pepper , minced
- 1 cucumber , chopped
- 2 greens onions , chopped
- 0.25 cups chopped fresh parsley
- 3 tablespoons fresh lemon juice
- 2 tablespoons red wine vinegar
- 1 clove garlic , minced
- 1 teaspoon dried tarragon
- 1 teaspoon dried basil
- 1 teaspoon white sugar
- salt and pepper to taste

Gather all ingredients.

Combine tomato juice, tomatoes, onion, bell pepper, cucumber, green onions, parsley, lemon juice, red wine vinegar, garlic, tarragon, basil, sugar, salt, and pepper in a blender or food processor. Blend until well combined but still slightly chunky.

Pour into a serving bowl and cover. Place in the refrigerator to chill before serving, at least 2 hours.
