A very refreshing, easy Florida specialty pie!
Ingredients
- 1 prepared graham cracker crust , 9 inch
- 3 eggs , separated
- 1 can sweetened condensed milk , 14 ounce
- 1 teaspoon grated lime zest
- 0.33 cups fresh lime juice
- 1 cup frozen whipped topping , Optional

Preheat oven to 250 degrees F (125 degrees C).

In a large glass or metal bowl, beat egg whites until stiff peaks form. Set aside.

In a medium bowl, beat egg yolks, then stir in condensed milk, lime rind, and lime juice. Mix well, then fold mixture into beaten egg whites. Pour mixture into graham cracker crust.

Bake in preheated oven for 10 minutes. Chill before serving. Garnish with whipped topping if desired.

Pina Colada Cake (Hybrid Pineapple Upside-Down Cake)
This is a hybrid pineapple upside-down cake which I've developed over the years. Instead of pineapple rings, I use crushed pineapple, coconut, and honey. It is very important to cool the mixture of butter and brown sugar before covering it with the rest of the ingredients, preventing the layer of pineapple and the cake mix from mixing prematurely. Makes one 9x13 baking pan.
