Ingredients
- 1 package lemon cake mix , 18.25 ounce
- 2 eggs
- 0.33 cups vegetable oil
- 1 cup confectioners' sugar
- 0.25 teaspoons lemon extract
- 1 tablespoon milk

Preheat oven to 350 degrees F (175 degrees C). Line baking sheets with foil.

Mix together cake mix, eggs, and vegetable oil. Drop by rounded teaspoons onto baking sheets and bake for no more than 8 minutes. Do not overbake! Once all the cookies are done. Remove the foil. You have a no need to clean baking sheet.

To Make Lemon Icing: Mix together confectioners' sugar, lemon extract, and milk. Mix ingredients together (more or less to your desired liking). When the cookies are warm or completely cooled, place as much icing on them as you like!

Seafood Boil
This seafood boil is an old recipe perfect for family get-togethers. It's good and fun, and clean-up is easy. It's best made outside and served on a picnic table covered with 4 to 5 layers of newspaper. Remove everything from the pot, drain, and spread in the center of the table. Gather everyone around and enjoy the feast. When everyone has had their fill, gather up the leftovers (if there are any), put all the scraps in the center of the table, roll up the newspaper around them, and put them in the trash. Wash the one pot, and the cleanup is done. Have fun and enjoy.
Cheddar Pecan Stuffed Mushrooms
In my husband's family, we have a tradition of making a variety of appetizers as our meal for Christmas Eve. My sister-in-law brought these one year and they have been one of our favorites ever since. I don't generally use the large stuffing mushrooms, though you can if you're serving this as a first or second course in a formal dinner. Instead I use regular button mushrooms so 15 or so people can have two or three each.
