This roasted cauliflower with curry is simple and melts in your mouth. It's perfect as a spicy vegan side dish or even as a quick and easy main course.

Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon yellow curry powder
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 1 pound cauliflower florets , cut into 1/2-inch slices

Instructions

    Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
