This easy tortellini salad recipe combines spinach, three-cheese tortellini, and marinated artichoke hearts. It's a perfect summer side dish or main dish! Try my lite Italian salad dressing recipe with this salad!
Ingredients
- 1 package dried spinach tortellini , 8 ounce
- 1 package dried three-cheese tortellini , 8 ounce
- 1 cup grape tomatoes , halved
- 1 jar marinated artichoke hearts , 6 ounce
- 1 can sliced black olives , 6 ounce
- 0.5 reds onion , thinly sliced
- 0.25 cups grated carrots
- 1.5 cups oil and vinegar dressing

Fill a large pot with lightly salted water and bring to a rolling boil. Stir in spinach and three-cheese tortellini and return to a boil. Cook, uncovered, stirring occasionally, until tortellini float to the top, pasta tender yet firm to the bite, and filling is hot, 10 to 11 minutes. Drain well; cool tortellini.

Combine tortellini, grape tomatoes, artichoke hearts, olives, red onion, and carrots in a large bowl; toss with dressing.

Cover bowl with plastic wrap; refrigerate until chilled, at least 3 hours to overnight.
