These easy zucchini muffins are moist, dense, and make a delicious snack. I had apples and zucchini that were just begging to be turned into something wonderful!
Ingredients
- cooking spray
- 1.25 cups white sugar
- 0.67 cups oil
- 3 large eggs
- 1 tablespoon vanilla extract
- 2.25 cups all-purpose flour
- 1.5 tablespoons ground cinnamon , or more to taste
- 0.75 teaspoons baking soda
- 0.75 teaspoons baking powder
- 2 cups shredded zucchini
- 1 cup shredded apple

Preheat the oven to 350 degrees F (175 degrees C). Spray 24 muffin cups with cooking spray or line with paper liners.

Whisk sugar, oil, eggs, and vanilla extract together in a bowl until smooth. Stir flour, cinnamon, baking soda, and baking powder into sugar mixture just until batter is combined; fold in shredded zucchini and apple.

Spoon batter into the prepared muffin cups, filling each 2/3 full.

Bake in the preheated oven until until muffins spring back after pressing the top, about 25 minutes.

Instant Pot Mushroom Broth
This basic mushroom broth made in an Instant Pot is used for flavoring soup, pasta, and rice. Any combination of mushrooms can be used, but I find that baby bellas make the richest, most flavorful broth. Fresh herbs add a lot of flavor, but since I do not know the specifics of what you will be using this for, I kept it basic and left them out. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
