Feta-Stuffed Cocktail Buffalo Chicken Meatballs
All the flavors you love in an order of Buffalo wings baked inside bite-sized meatballs. Perfect for a football game, but don't expect them to last until half-time.
Ingredients
- cooking spray
- 1 pound ground chicken
- 0.25 cups crumbled feta cheese
- 1 medium egg
- 0.25 cups panko bread crumbs
- 0.25 cups minced carrot
- 0.25 cups minced celery
- 1 clove garlic , minced
- 1 tablespoon ranch dressing mix
- 0.5 cups Buffalo wing sauce

Preheat the oven to 400 degrees F (200 degrees C). Coat a large baking sheet with cooking spray.

Combine chicken, feta cheese, egg, bread crumbs, carrot, celery, garlic, and ranch dressing mix in a large bowl. Mix evenly until combined. Form mixture into 1/2-inch meatballs and place on the prepared baking sheet.

Bake in the preheated oven for 10 minutes; turn meatballs. Continue baking until no cooked through, about 14 minutes more.

Transfer cooked meatballs to a large bowl, add Buffalo wing sauce, and gently toss to combine.

Super Easy Fruit Dip
This is a fruit dip that's very easy! Blend your favorite yogurt flavor with frozen whipped topping and dip! I use slices of Granny Smith, Golden and Red delicious apples, white & red grapes, orange sections, strawberries, kiwi fruit and pineapple chunks for a platter.
Flemish Frites - Belgian Fries with Andalouse Sauce
Belgian fries are cooked twice for a soft middle and crisp outside and served with a mayo sauce called 'Andalouse' that can be best described as vaguely similar to Thousand Island dressing. The sauce makes a great chip dip or vegetable dip as well. We go through so much of it, I double it! My husband's family is Belgian, Flemish to be exact. I am told Flemish is equated with quality. This is a snack that is worth the time and effort! Since this is all about quality, be sure to use firm, fresh potatoes. Bring the sauce to room temperature before serving.

A real-deal beef slider isn't just a tiny hamburger, which is what you get at the vast majority of restaurants. To be authentic, it has to be steamed over a bed of onions, bread, and all. You can change up the toppings, but I love them best with the traditional pickles and onions.
