This cranberry cake is topped with a rich vanilla sauce. It looks beautiful and is easy to make with fresh cranberries for a decadent Thanksgiving or Christmas dessert.
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking soda
- 1 teaspoon salt
- 1 cup white sugar
- 3 tablespoons butter , melted
- 2 large eggs , beaten
- 1 cup milk
- 3 cups fresh cranberries

Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.

To make the cranberry cake: Combine flour, baking soda, and salt in a large bowl.

Whisk 1 cup sugar and 3 tablespoons melted butter together in a separate large bowl; add eggs and beat until smooth. Stir flour mixture and milk into egg mixture until batter is well blended.

Fold in cranberries until just combined; pour batter into the prepared baking dish.

Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 30 minutes.

To make the vanilla sauce: Heat 1 cup sugar, 1/2 cup butter, heavy cream, and vanilla extract in a saucepan over medium-low heat; cook and stir until sugar is dissolved, about 10 minutes.

Pour hot sauce over hot cake. Allow cake to cool in the baking dish for 10 minutes before removing to cool completely on a wire rack.

Verde Chilaquiles
This recipe was something I made up after having some sub-par chilaquiles at my favorite local breakfast place. This is my favorite Mexican breakfast dish and is great for a light dinner as well, serve with refried beans and some pico de gallo and you'll be craving for more! Garnish with more cilantro and sour cream. Great for leftover salsa verde or stale tortilla chips, perfect for a family brunch or other special breakfast occasion.
Chunky Corn Chowder (Vegan)
A comforting and satisfying chowder with chunky veggies - perfect for a cold winter's day or any time you crave comfort soup! My son has severe food allergies and cannot have any dairy or egg - so I created this to satisfy his craving for soup! I make it a point to create recipes for him that the rest of the family is also thrilled to eat and this definitely meets that criteria. It tastes a little more broth-like than traditional chowders, but was very comforting nonetheless.
