These frozen peach bellinis taste heavenly on a hot day. For an extra bit of 'oomph', add a splash of bourbon to the peach mixture.
Ingredients
- 1 , 16 ounce
- 1.5 cups peach juice
- 2 teaspoons lemon juice
- 1 tablespoon honey
- 1 , 750 mL
- fresh peach slices

Place frozen peaches, peach juice, lemon juice, and honey in the cup of a high speed blender; blend until smooth and combined, stopping to scrape down the sides of the cup as necessary. If mixture is too thick, add more peach juice as needed.

Pour into 5 or 6 champagne flutes, filling them each about 1/2 full.

Pour sparkling wine over peach mixture in each flute, filling them to just below the top. Carefully stir each bellini to combine. Garnish with a peach slice, if desired. Serve immediately.

A variation from overnight oats recipe from Alli Shircliff. This is for anyone who doesn't/can't eat oatmeal but wants a delicious, fast, and healthy breakfast. This uses buckwheat flakes--not the cereal flakes but rolled and flaked buckwheat. They look very similar to oatmeal flakes but are much smaller. Mix in agave and berries. Eat and enjoy!
