Frikadellen, the original hamburger, are served like a flattened meatball with string beans and salad. I also like to use this recipe to make Swedish meatballs (but omit the paprika). My aunt in Hamburg, Germany, taught me this recipe, and I've been making it ever since. Serve with steamed string beans and tossed salad. Or serve on a kaiser roll with lettuce, tomato, pickled cucumbers, finely sliced deep-fried onions, and curry ketchup.
Ingredients
- 1 kaiser roll
- 0.67 pounds ground beef
- 0.33 pounds ground pork
- 1 onion , finely chopped
- 0.25 cups chopped fresh parsley
- 1 large egg
- 1 teaspoon Hungarian hot paprika , Optional
- salt and ground black pepper to taste
Instructions
-
1
Soak kaiser roll in a medium bowl of water for 10 minutes. Drain and squeeze out excess water; crumble into a large bowl.
-
2
Add ground meats, onion, parsley, egg, paprika, salt, and black pepper to crumbled roll; mix until well blended. Shape mixture into large flattened meatballs.
-
3
Heat a large nonstick skillet over medium heat. Fry meatballs in the hot skillet until browned and no longer pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center of a patty should read at least 160 degrees F (70 degrees C).

Refrigerator Pickles
This recipe for refrigerator pickles with celery seeds was given to me by my late mother-in-law and makes use of the abundant summertime supply of cucumbers. A neighbor recently presented me with four (5-gallon) buckets of cucumbers from his garden, and I made pickles for the whole neighborhood. The pickles will stay fresh in the refrigerator for 2 ยฝ to 3 weeks.
Grandpa's Beef, Mushroom, and Barley Soup
I miss my Grandparents dearly. Grandpa loved to cook while Grandma knitted on the sofa. This helps brings them back to me. This recipe was one of my favorites growing up. It's an old-fashioned, slow-cooking, lick-the-bowl, stick-to-your-ribs type of soup. The family loves it. It's traditional at holiday time with a nice slice of rye bread to dip in it.
Strawberry-Banana-Tahini Pops
Strawberries, bananas, tahini, and chocolate meet in this fruity, creamy, nutty frozen treat.
