Vegetarian Quesadillas
These are delicious and very filling! The small amount of cheese really goes a long way - they taste cheesy but aren't oozing and loaded with fat. They also contain lots of fiber. For a very nutritious and yummy meal, I eat half of one, a salad with avocado, and an orange.
LaWanna's Mango Salsa on Tilapia Fillets
A delicious fruity salsa topping to serve over fish or chicken, from a friend in Florida. I always use whatever that I have left in a mixed greens salad the next day. Use any kind of fish -- I use tilapia or salmon. The fish may also be grilled, which is what I prefer. If I can't find a good fresh pineapple, I will use canned pineapple tidbits.
Lasagna-Stuffed Manicotti Shells
Manicotti shells are stuffed with Italian sausage, beef, and cheese and then breaded and fried to perfect bite-sized snacks! These little fried lasagna bites are cheesy balls infused with all the earthy flavors of fresh rosemary, thyme, and, of course, lots of basil!
