Carrot Bundt Cake
This carrot Bundt cake gets an extra boost of moisture and flavor thanks to the addition of both pureed and grated carrots. Crushed pineapple also adds a nice bright note. The cake is topped with a light, sweet cream cheese glaze. Feel free to add some chopped walnuts or pecans to the batter, if you wish.
Cranberry Nut Granola Bars
This is one fast and totally addicting recipe. It's easy to adjust to your tastes or what's in your cupboard - try adding chocolate chips, coconut, raisins, cherries or a spoonful of peanut butter. You'll be making this every week.
Loaded Beef Nachos
I load these nachos with sour cream, salsa, sliced olives, jalapeños, and chopped green onion, but all these toppings are optional - use what you like! I've made many, many plates of loaded nachos before settling on this version. I have also made them with turkey, and a vegetarian version, but really enjoy them with beef.
