This spiced cake with fresh figs makes your whole house smell good.
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 0.5 teaspoons salt
- 1.5 cups white sugar
- 1 cup butter , softened
- 3 eggs , beaten
- 1 cup buttermilk
- 1 cup chopped fresh figs
- 1 cup chopped pecans
Instructions
-
1
Preheat the oven to 300 degrees F (150 degrees C). Grease a 9x13-inch dish.
-
2
Make the cake: Mix flour, cinnamon, cloves, nutmeg, baking soda, baking powder, and salt together in a bowl.
-
3
Cream sugar and butter in a large bowl with an electric mixer until light and fluffy. Stir in eggs. Beat in flour mixture alternately with buttermilk, mixing just until incorporated. Fold in figs and pecans. Pour batter into the prepared pan.
-
4
Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, about 1 hour. Remove from the oven and let cool, about 30 minutes.
-
5
Meanwhile, make the glaze: Combine butter, sugar, evaporated milk, and baking soda in a large saucepan. Bring to a boil, stirring until sugar is dissolved. Continue to cook, without stirring, until the mixture turns brown and measures 240 degrees F (115 degrees C); a small amount of syrup dropped into cold water should form a soft ball that flattens when removed from the water and placed onto a flat surface.
-
6
Pour into a small bowl and beat until it thickens to a spreading consistency. Quickly spread icing onto the cooled cake.

Country Fried Floured Bacon
OOh's and Mmmm's before, during, and after eating this bacon will become commonplace for your household. Every time I just suggest cooking this recipe, those sounds begin. My grandmother, my mother, and I cook this bacon for our family and friends, and it is always a favorite once it has been tried by one and all. This is excellent for breakfast, snacks, or upgrade your BLT to a place it has never been before. Once you have had bacon this way, it will be very hard to go back to the way you did it before you discover this treasure of a recipe. Something so simple CAN be so wonderful!
Mini Banana Pudding Bites
Banana pudding bites? Yes, please! Use your mini muffin pans and vanilla wafer crumbs to create these tasty little treats. I only used one banana, and you may use either vanilla or banana flavored instant pudding mix. It only takes half a package of the mix, so you can make them again!
Bayou's Mardi Gras Slaw
This is a wonderfully colorful cole slaw perfect for celebrating Mardi Gras or any other time. It is presented in the official colors of Mardi Gras: purple, green, and gold. The sauce is a perfect blend of sweet and tart, with a little cayenne pepper for bite. Do not dress the coleslaw ahead, or it will become soggy.
