This is my grandma's blackberry cobbler recipe, and I've never found another that compares. I always make it with blackberries, but you can use any fruit you like.
Ingredients
- 3 cups white sugar , divided
- 2 tablespoons cornstarch
- 2 pinches salt , divided
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1 cup butter , softened
- 1 cup milk
- 2 pounds fresh blackberries
- 2 cups boiling water
Instructions
-
1
Preheat the oven to 350 degrees F (175 degrees C).
-
2
Whisk 1 ½ cups sugar, cornstarch, and 1 pinch salt together in a small bowl; set aside.
-
3
Whisk flour, remaining 1 ½ cups sugar, baking powder, and remaining 1 pinch salt together in a large bowl; stir in butter until mixture resembles cornmeal. Stir in milk until moist.
-
4
Spread blackberries in an even layer in a 9x13-inch baking dish; spoon batter evenly over top. Sprinkle sugar-cornstarch mixture over batter; pour boiling water over top.
-
5
Bake in the preheated oven until fruit is bubbling and topping is golden brown, 40 to 45 minutes.
