My Granny always made this easy casserole for Thanksgiving and Christmas dinner.
Ingredients
- 1 pound lean ground beef
- 1 onion , finely diced
- 1 can diced tomatoes , 14.5 ounce
- 1 can condensed cream of mushroom soup , 10.5 ounce
- 1 cup instant rice
- 2 teaspoons white sugar
- 1 tablespoon garlic powder
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 6 slices American cheese

Preheat the oven to 350 degrees F (175 degrees C).

Place ground beef and onions in a large, deep skillet. Cook over medium-high heat until beef is evenly brown. Drain any excess fat.

Add tomatoes, condensed soup, rice, sugar, garlic powder, thyme, and oregano. Mix well and cook over medium heat for 10 minutes. Place in a 9x13-inch casserole dish.

Top with cheese slices and bake until cheese is bubbling and browning, 15 to 20 minutes.

Mamaw's Chicken and Rice Casserole
I grew up with this chicken and rice casserole recipe. My Grandmother got it from a lady from church at a potluck a long time ago! She passed it down to my mom and it's always been a family favorite. Quick and easy for school nights, and the leftovers are just as good! You can use less butter on top of course, my Momma and Mamaw always put the full stick on top (gotta love Southern ladies and their butter!)
