This Greek chicken recipe includes a lemon, garlic, and oregano marinade that's great for summer grilling season! I love to serve this chicken with sliced tomatoes, feta cheese, and garlic bread.
Ingredients
- 0.5 cups olive oil
- 2 medium lemons , juiced
- 3 cloves garlic , chopped
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh oregano
- 1 chicken , 4 pound
Instructions
-
1
Mix olive oil, lemon juice, garlic, rosemary, thyme, and oregano in a glass dish. Place chicken pieces in the mixture; cover and marinate in the refrigerator for 2 to 3 hours.
-
2
Preheat an outdoor grill for high heat and lightly oil the grate.
-
3
Place chicken on the grill, and discard the marinade. Cook until chicken is no longer pink at the bone and the juices run clear, about 15 minutes per side (smaller pieces will not take as long). An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Eggplant Parmesan With Easy Homemade Sauce
I wasn't an eggplant lover until a friend gave me this eggplant Parmesan with homemade tomato sauce recipe which I have tweaked and updated. The sauce is made with just a few ingredients and is far tastier than canned sauce. All you need is a side salad and crusty bread to make a meal!
