This Greek chicken recipe includes a lemon, garlic, and oregano marinade that's great for summer grilling season! I love to serve this chicken with sliced tomatoes, feta cheese, and garlic bread.
Ingredients
- 0.5 cups olive oil
- 2 medium lemons , juiced
- 3 cloves garlic , chopped
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh oregano
- 1 chicken , 4 pound
Instructions
-
1
Mix olive oil, lemon juice, garlic, rosemary, thyme, and oregano in a glass dish. Place chicken pieces in the mixture; cover and marinate in the refrigerator for 2 to 3 hours.
-
2
Preheat an outdoor grill for high heat and lightly oil the grate.
-
3
Place chicken on the grill, and discard the marinade. Cook until chicken is no longer pink at the bone and the juices run clear, about 15 minutes per side (smaller pieces will not take as long). An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).

Easy Cabbage and Bean Soup
Hearty and delicious, this easy cabbage and bean soup would be great for a quick meatless meal. Add some cornbread, or a crusty baguette and a green salad, and you're there!
Stewed Cabbage
This is a family favorite that my mother-in-law fixed for me while I was visiting her home last year. Serve over white rice, if desired.
Big V's Slow-Cooker Pulled Pork
A wonderfully easy, exceptionally tender pulled pork recipe. The meat literally falls off the bone and the marinade adds an excellent flavor that can complement any BBQ sauce. This recipe is great if you're looking for a make-ahead meal. Pulled pork is great served on fresh baked rolls or pita bread with sharp Cheddar cheese and coleslaw. You can serve the pork as is or mix in your favorite BBQ sauce.
