Ingredients

  • 1 container extra-firm tofu , 8 ounce
  • 10 large mushrooms
  • 1 zucchini , cut into large chunks
  • 1 red bell pepper , cut into large chunks
  • 0.25 cups soy sauce
  • 0.25 cups diced onion
  • 2 tablespoons Sriracha sauce
  • 2 tablespoons sesame oil
  • 1 jalapeño chile pepper , diced
  • ground black pepper to taste

Instructions

    Place tofu, mushrooms, zucchini, and bell pepper in a bowl. Combine soy sauce, onion, Sriracha, sesame oil, jalapeño, and black pepper in a small bowl; pour over tofu-vegetable mixture and toss lightly to coat. Cover the bowl; marinate tofu and vegetables in the refrigerator for at least 1 hour.

    Preheat an outdoor grill for medium-high heat, and lightly oil the grate.

    Thread tofu and vegetables onto skewers; reserve marinade.
