This ground beef fried rice is great with red wine, candlelight, and jazz music, or so says my father's second wife who apparently "captured" my father with this recipe. Who knows? But it is very delicious! You can add mushrooms or use different veggies, but start here first.
Ingredients
- 1 pound ground beef
- 1 tablespoon soy sauce
- 0.5 cloves garlic , chopped
- 1 teaspoon ground black pepper
- 0.5 teaspoons salt
- 1 tablespoon vegetable oil
- 2 medium carrots , chopped
- 0.5 medium green bell pepper , chopped
- 0.5 sweets onion , such as Vidalia®
- 1 cup cooked rice , or more to taste
- 1 tablespoon butter
- 1 large egg , beaten

Cook ground beef, soy sauce, garlic, pepper, and salt in a large skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Transfer to a plate; drain grease from the skillet.

Heat vegetable oil in the same skillet over medium heat. Add carrots, bell pepper, and onion; cook until tender, 15 to 20 minutes. Add beef back to the skillet with cooked rice; stir to combine, and heat until warmed through, 2 to 3 minutes.

Push beef and vegetable mixture to the sides of the pan; melt butter in the center. Cook and stir egg in melted butter until set, 3 to 4 minutes. Mix egg into beef and vegetable mixture until combined.

Velvet Steak with Korean Chili Butter
The velvet steak with Korean chili butter recipe uses the velveting technique, typically used for stir-fries, but I decided to try it on pan-fried top sirloin steaks, and my experiment was a great success! The theory behind velveting is that the egg white, cornstarch, and rice wine mixture coats the surface of the meat, locking in moisture and giving it a tender, velvety texture. Top sirloin is lean and doesn't have a lot of fat, but these steaks — thanks to the velveting — were unbelievably juicy! Serve it with rice or pasta to soak up the juices.
