I love salsa with a hint of natural sweetness and ground cherries are a perfect addition. This is a relatively mild salsa; if you like it spicier, don't remove the jalapeno seeds, or increase the amount of jalapeno. I use only organic produce, so I don't peel the cucumber.
Ingredients
- 1 ½ limes , juiced, or more to taste
- 2 tablespoons finely chopped red onion
- 0.5 cups ground cherries , husked and halved
- 0.5 cups cherry tomatoes , quartered
- 1 jalapeno pepper , seeded and minced
- 0.5 finelys chopped seeded cucumber
- 2 tablespoons finely chopped cilantro , or more to taste
- 1 dash passion fruit-jalapeno fruit vinegar , optional
- salt to taste

Mix lime juice and red onion together in a bowl and let stand stand for about 5 minutes, as this mellows the raw onion taste.

Add ground cherries, cherry tomatoes, jalapeno pepper, cucumber, cilantro, vinegar, and salt to the bowl and mix well. Serve right away or cover and refrigerate until serving.

Coconut Oil Sugar Cookies
This is a variation on a sugar cookie made with coconut oil. It tastes similar to a shortbread cookie, but they are very moist and delicious. Roll tops of cookies in sugar or colored sugar before baking for a festive treat. Cinnamon sugar works well, too.
Cherry Berry Pie with Whole Wheat Pie Crust
I made this cherry berry pie with whole wheat pie crust as a way to use up some of the beautiful late summer fruit that Michigan has to offer. Paired with pure Michigan maple syrup, this recipe contains no refined sugar and is complemented with additional flavor from a whole wheat crust. A mix of any wild berries and/or cherries should work for this, but make sure to adjust the maple syrup amount depending on the sweetness of your fruit.
