To make this harissa roasted cauliflower, I strongly suggest getting a harissa paste from a Middle-Eastern market. Keep in mind it can range from mild to spicy. I personally love harissa but never thought to use it on vegetables. If you like to try new things, this definitely brings the flavor.
Ingredients
- 1 head cauliflower
- 2 tablespoons harissa paste in oil
- 1 pinch salt
Instructions
-
1
Preheat oven to 375 degrees F (190 degrees F). Line a baking sheet with parchment.
-
2
Remove the greenery from cauliflower. Using your hands, gently but firmly pull cauliflower apart until you have several small clusters.
-
3
Place cauliflower on the prepared pan. Drizzle harissa paste onto cauliflower and toss well. Add a pinch of salt and toss again.
-
4
Roast in the preheated oven until tender, 30 to 40 minutes.

Red Wine-Marinated Beef Stew
A twist on traditional beef stew--stew meat that is so tender even the most finicky eaters will love! (i.e. kids that don't like meat that is tough to chew...like mine.) The "secret" is the acid from the red wine. It helps to break down the collagen, naturally tenderizing the meat and releasing great flavor! The longer you can marinate the better but a minimum of 3 hours is essential. Enjoy with a good crusty bread and a glass of red!
Dutch Oven Beef Stew
This hearty Dutch oven beef stew loaded with vegetables is so simple — sear the beef, add the remaining ingredients, and simmer until tender.
Italian Fig Cookies
This recipe for Italian fig cookies has been handed down through my mother's family for years. My grandmother brought it with her from Italy in the early 1900's. My mom taught me the recipe and now I am the designated person in our family to make these delicious fig cookies. This is a very high honor - so they must be as good as my Grandmothers' cookies! Some people call these homemade fig Newtons. They are a tradition at Christmas and are wonderful with a hot cup of coffee.
