I made this pizza quesadilla when I was craving Hawaiian pizza but only had flour tortillas on hand. It's now my favorite quesadilla! I like to mix sour cream and salsa in a small bowl for dipping.
Ingredients
- 10 flours tortillas
- 1.5 pounds sliced ham
- 3 packages shredded mozzarella and Cheddar cheese blend , 8 ounce
- 1 jar salsa , 8 ounce
- 1 can pineapple chunks , 15 ounce
- 1 carton sour cream , 8 ounce
Instructions
-
1
Heat a griddle over medium-high heat. Toast one side of a tortilla, 1 to 2 minutes. Lay 2 to 3 slices of ham on the other side of the griddle to heat through. Flip toasted tortilla over, sprinkle with mozzarella and Cheddar cheese blend, layer with hot ham, spread with desired amount of salsa, sprinkle with desired amount of pineapple, and fold tortilla in half.

Turn quesadilla over and continue to cook until cheese is melted and tortilla has reached desired crispness, 2 to 4 minutes. Cut into wedges with a pizza cutter. Repeat with remaining ingredients. Serve with sour cream.

Chicken and Chinese Vegetable Stir-Fry
This is a fantastic stir-fry dish that tastes like it came straight from a good Chinese restaurant! It never fails to get rave reviews from my family and friends! Serve it hot over white or brown rice.
Squash and Kohlrabi Empanadas
Need to sneak some vegetables by a picky eater? These empanadas, inspired by a trip to Mendoza, Argentina, are the perfect vehicle for spicing up boring vegetables. Use homemade dough if you want, but for those short on time as we all usually are, store-bought pie crust works great. Switch up the vegetables with what is in season.
Cornes de Gazelle (Gazelle Horns)
Cornes de gazelle are crescent-shaped cookies that are filled with a sweet almond-orange blossom filling and are topped with crushed pistachios. They popular all over North Africa in Tunisia, Algeria, and Morocco and are also known as tcherek, tcharek, or kaab el ghazal.
