This easy recipe for tilapia only takes a few minutes to prepare, uses few ingredients, and is flavorful. Use fresh minced garlic instead of garlic powder to make it healthier.

- 2 teaspoons butter
- 1 clove garlic , minced
- 1 lemon , sliced
- 1 , 16 ounce
- salt and ground black pepper to taste

Preheat the oven to 375 degrees F (190 degrees F). Lightly grease a 9x13-inch baking dish.

Place tilapia fillets in the bottom of the baking dish and season with seafood seasoning. Melt butter with garlic in a small bowl in the microwave, about 30 seconds on medium; pour over fish. Top each fillet with a slice or two of lemon. Arrange the frozen mixed vegetables around the fish, and season lightly with salt and pepper. Cover the dish with aluminum foil.

Bake in the preheated oven until vegetables are tender and fish flakes easily with a fork, 25 to 30 minutes.

Easy Slow Cooker Tuna Casserole
I couldn't find many slow cooker pasta recipes here that would cook the pasta along with everything else in the cooker. So this is a basic recipe that I made up, along the lines of my mama's stovetop tuna casserole, that can be tweaked by using different type of soup, vegetables, and pasta types as well as adding more or different cheeses, herbs, or spices. Super easy and even my 2-year-old ate it! It makes a very soft pasta, not al dente.

I created this roasted butternut squash soup with apples and bacon recipe on Christmas Eve, which was a huge hit. The caramelized roasted squash gives the soup extra depth of flavor. This soup has a very creamy consistency but is completely dairy-free except for the optional garnish of sour cream (I did this on purpose due to a guest who was allergic to dairy). It is also extremely healthy. Don't shy away from the curry powder; it gives the soup extra flavor. Feel free to play around with the amount of carrot, onion, celery, or garlic to your taste. This soup can be made the day before and reheated.
