After searching through several recipes, I decided to put this recipe together by using my favorite ingredients. The resulting ground beef chili is flavorful and hearty. It's excellent when served with homemade cornbread.
Ingredients
- 1 tablespoon olive oil
- 1.5 pounds ground beef
- 1 small onion , chopped
- 1 stalk celery , chopped
- 0.5 greens bell pepper , chopped
- 1 can diced tomatoes , 28 ounce
- 1 can light red beans , 15.5 ounce
- 1 can dark red beans , 15.5 ounce
- 1 can black beans , 15.5 ounce
- 1 can diced tomatoes with green chile peppers , 14.5 ounce
- 3 tablespoons chili powder , or to taste
- 2 teaspoons white vinegar
- sea salt and ground black pepper to taste
- shredded Cheddar cheese , or to taste

Heat olive oil in a large pot over medium heat. Cook and stir ground beef in the hot pot until browned and crumbly, about 10 minutes. Add onion, celery, and green bell pepper. Cook until onion is translucent, about 5 minutes.

Stir diced tomatoes, light red beans, dark red beans, black beans, diced tomatoes with chile peppers, and chili powder into the meat mixture. Bring to a boil. Reduce heat to low and let simmer until chili has started to thicken, about 1 hour. Season with vinegar, salt, and pepper. Garnish with Cheddar cheese.

Carrot-Apple Muffins
Cooler weather has arrived, and as always, my mind wanders to fall produce with apples at the top of the list. These tender, lightly sweetened, moist muffins taste like carrot cake, spice cake, and apple cake combined. Use pickle brine next time you feel like cooking chicken. There aren't a lot of great uses for leftover pickle juice. I recently heard that some people like to drink this stuff after jogging, which I found shocking since I had no idea people still jogged. Like most brined recipes, the payoff is in the texture and moisture content and not necessarily in the taste. But this dish does have a nice little twang. So the next time you have nothing left in the pickle jar but the juice, you now know what to do.
Harvest Salmon Bowls
For these salmon harvest bowls, broccoli and Brussels sprouts are roasted on a sheet pan with salmon, then served in a bowl with quinoa, feta, cranberries, and pistachios, a perfect bowl of fall flavors.
