Leftover Ham and Shrimp Slow Cooker Gumbo
This ham and shrimp slow cooker gumbo is perfect for using up that leftover holiday ham that just won't quit! This recipe is also great if you want to freeze it and save for later if you're "hammed out." Two of my three young sons loved it, and the third asked for no beans and shrimp, which was easy to filter out of his bowl. My husband devoured it and wished it had more shrimp. Overall, this was a success, considering it was just a week after daily doses of Easter ham. Serve it by itself or over white rice.
Sausage Balls with Flour
Trying to get away from processed foods, I created a recipe for sausage balls that uses flour and doesn't use baking mix.
Algerian Kefta (Meatballs)
This simple meatball dish is delicious, rich, and fresh. My Algerian husband taught me it as it's one of his favorites from home. The tomato sauce can be used for anything, and the flavors can be adjusted. I like a lot of garlic and pepper. I have found halal hamburger meat to be much leaner and lighter than regular. You can find it at international food stores and halal butcher shops in bigger cities. Serve this dish with a French baguette.
