This is an all-time, excellent, and easy pumpkin bread recipe that makes three loaves perfect for gifting to family and friends or bringing to school functions, work parties, etc. It's always raved about!
Ingredients
- 3 cups canned pumpkin puree
- 1.5 cups vegetable oil
- 4 cups white sugar
- 6 large eggs
- 4.75 cups all-purpose flour
- 1.5 teaspoons baking powder
- 1.5 teaspoons baking soda
- 1.5 teaspoons salt
- 1.5 teaspoons ground cinnamon
- 1.5 teaspoons ground nutmeg
- 1.5 teaspoons ground cloves

Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9x5-inch loaf pans.

Mix pumpkin, oil, sugar, and eggs together in a large bowl. Combine flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves in a separate bowl; stir into pumpkin mixture until well blended. Divide batter evenly between the prepared pans.

Bake in preheated oven until a toothpick inserted into the center of each loaf comes out clean, about 45 minutes to 1 hour.

This gluten-free breakfast casserole is a simple recipe that's easy to make. Really nice when you have company over in the morning. Get it ready, pop it in the oven and you have time to socialize while it's cooking! I cut this recipe in half, place it on a pie plate, and bake uncovered for 45 minutes for breakfast for a smaller family; it tastes very much like a crustless quiche and my husband loves it!
