This Instant Pot salt and vinegar boiled peanuts recipe was inspired by a craving for something different from the classic Cajun style. Seeing a bag of salt and vinegar chips, I thought — why not? Plus, Instant Pot boiled peanuts are a breeze.
Ingredients
- 2 cups distilled white vinegar
- 2 cups water
- 0.33 cups salt
- 1 pound raw Virginia peanuts in shells
Instructions
-
1
Whisk vinegar, water, and salt together in a large bowl; stir in peanuts to coat. Transfer to a gallon-sized resealable plastic bag; sit aside for 8 hours to overnight.
-
2
Transfer peanuts and liquid to a multi-functional pressure cooker (such as Instant Pot). Close and lock the lid. Select high pressure according to manufacturer's instructions. Set a timer for 120 minutes. Allow 10 to 15 minutes for pressure to build.
-
3
Release pressure using the natural-release method according to manufacturer's instructions, about 20 minutes. Unlock and remove the lid.

Mom's Mustard-Style Potato Salad
This is a traditional potato salad recipe with mustard — mashed and made from scratch.
Mini Ham Loaves
These mini ham loaves are a family favorite. My aunt used to make them every Easter. The recipe comes from an old church cookbook. Whenever I order meat from the local meat market, I order ground ham and pork premixed. I order triple the required meat, packaged into three packages. I give one to my mother, use one, and freeze one to use later. Serve these loaves with horseradish.
Grandma's Yorkshire Pudding
These are delicious Yorkies! Very easy, too! Serve Yorkshire pudding with roast beef or pork, as this recipe requires meat drippings.
