This taco-in-a-bowl recipe uses an Instant Pot to pressure cook beef stew meat with taco seasoning, turning it tender and delicious. It makes enough for a week of prepped lunches. Garnish with salsa, sour cream, avocado, and cilantro before serving.
Ingredients
- 2 tablespoons olive oil
- 2 pounds beef stew meat
- 0.5 onion , sliced
- 0.33 cups taco seasoning mix , such as Savory Spice
- 2.75 cups water , divided
- 2 teaspoons garlic salt
- 1 bag yellow rice , 10 ounce
- 1 can black beans , 15.25 ounce
- 1 can corn kernels , 15.25 ounce
- 1 package shredded Cheddar cheese , 8 ounce
Instructions
-
1
Turn on a multi-functional pressure cooker (such as Instant Pot) and select Sauté function. Heat oil in the pressure cooker. Add beef and cook until browned, about 3 minutes per side. Add onion, taco seasoning, 1/4 cup water, and garlic salt; stir to combine.
-
2
Close and lock the lid. Select high pressure according to manufacturer's instructions; set the timer for 30 minutes. Allow 10 to 15 minutes for pressure to build.
-
3
Meanwhile, bring remaining 2 1/2 cups water to a boil in a large saucepan. Add rice and stir for 1 minute. Cover the saucepan tightly with a lid. Reduce heat to a simmer and cook until rice is tender, 20 to 25 minutes. Remove from heat and let cool completely.
-
4
Release pressure naturally according to manufacturer's instructions, 10 to 40 minutes. Let cool completely.
-
5
Divide rice and beef among 6 reusable containers. Top with equal amounts of black beans, corn, and Cheddar cheese. Cover and refrigerate.

Crispy Peanut Butter Chocolate Log
This peanut butter chocolate log recipe is a delicious variation of Rice Krispies treats.
Sasa's Chocolate Peanut Butter Protein Bites
This is a favorite among my teenage athletes for a before-practice snack. I fill baggies with these and throw them in the freezer. The kids grab a baggie on the way to school and the mini muffins are thawed out and ready to eat before the end of the day.
Peanut Butter Chocolate Chip Brownies
As a kid, I loved peanut butter brownies, but my adult taste buds find the available recipes overly sweet with a mild peanut flavor. This updated peanut butter chocolate chip brownie recipe relies on powdered peanuts to boost peanut flavor. I've reduced the sugar by about one-third from the typical recipes. This recipe reflects the best of the three variations that I attempted.
