This is a good recipe that's quick and easy. Pine nuts may be substituted for the slivered almonds in this chewy cookie.
Ingredients
- 16 ounces almond paste
- 6 eggs whites
- 1 cup white sugar
- 1 cup confectioners' sugar
- 0.5 cups sifted all-purpose flour
- 0.25 teaspoons salt
- 2 teaspoons lemon extract
- 3 dropss red food coloring
- 0.5 cups slivered almonds

Preheat the oven to 300 degrees F (150 degrees C). Line cookie sheets with parchment paper.

In a medium bowl, stir together the almond paste, egg whites and lemon extract until smooth. Sift together the white sugar and confectioners' sugar, then combine sugars with the flour and salt. Stir the dry ingredients into the egg mixture along with the food coloring of your choice. Drop by teaspoonfuls, two inches apart, onto the prepared cookie sheets. Sprinkle some nuts on top of each cookie.

Bake for 25 to 30 minutes in the preheated oven, until cookies are golden around the edges. Cool for a few minutes on baking sheets before removing to wire racks to cool completely. Store or freeze in an airtight container.

Summer Berry Stack
I created this recipe after having a similar cake in the cafe of a local bookstore I worked at years ago. I never forgot how delicious the dessert was, with the tartness of berries and citrus that complemented perfectly with the sweetness of the cake, the cheesecake layer, and white chocolate, so I decided to recreate it myself. The dessert from the cafe was actually mass-produced and shipped in frozen, so this is a fresh, homemade version that tastes even better than the original, if I do say so myself (haha). This elegant cake mix cheesecake stacks tart summer berries and lemon curd against creamy lime whip.
Lentil, Quinoa, and Mung Bean Salad
Packed with fiber, protein, and potassium and lightly dressed with fresh lemon juice and olive oil. This is a family favorite that is always requested for cookouts. I sometimes add a little honey as the acid in lemons can vary depending on the lemon that is used. Top each serving with a little feta, if desired.
