Moist, turkey meatloaf that adds a twist with Italian ingredients at the finish.
Ingredients

- 1 pound lean ground turkey
- 0.5 cups Italian-style seasoned bread crumbs
- 0.5 cups grated Parmesan cheese
- 1 large egg
- 1 tablespoon Italian seasoning
- 1 teaspoon chopped garlic
- 1 teaspoon ground black pepper
- 1 teaspoon salt
- 1 , 8 ounce
- 0.5 cups shredded mozzarella cheese

Preheat the oven to 375 degrees F (190 degrees C). Spray a 9-inch square baking dish with cooking spray.

Mix together turkey, bread crumbs, Parmesan cheese, egg, Italian seasoning, garlic, pepper, and salt in a medium bowl until well combined. Form mixture into a loaf and place in the prepared baking dish.

Bake in the preheated oven for 45 minutes. Pour tomato sauce over the meatloaf and bake for 5 more minutes.

Sprinkle mozzarella cheese over top and bake until cheese is melted and an instant-read thermometer inserted into the center of the meatloaf reads at least 160 degrees F (71 degrees C), about 5 more minutes.

I could not be more pleased with how this Mongolian Meatloaf experiment turned out. Since I couldn't decide whether to make meatloaf or Mongolian beef, I decided to try both things at once. The result is a tender meatloaf, sliced and crisped in a skillet and served with a sweet, salty, savory sauce, which, like the American Chinese restaurant favorite, Mongolian Beef, is not remotely Mongolian. But it sure is delicious, especially served over steamed rice with bok choy.
