I found Janet's banana bread in the back of my mom's recipe box when I was trying to find something to bake. I loved it, and so did my mom. The nuts are optional. I hope you enjoy it.
Ingredients
- 3 cups white sugar
- 0.75 cups butter , softened
- 3 large eggs
- 2 cups mashed ripe banana
- 0.5 cups sour cream
- 3.5 cups all-purpose flour
- 1.5 cups chopped pecans
- 1 teaspoon baking soda
- 0.5 teaspoons baking powder
- 0.5 teaspoons ground cinnamon
Instructions
-
1
Preheat the oven to 325 degrees F (165 degrees C). Lightly grease and flour two 8x4-inch loaf pans.
-
2
Beat together sugar and butter in a large bowl with an electric mixer until light and fluffy. Beat in eggs one at a time, mixing well after each addition. Stir in banana and sour cream.
-
3
Combine flour, pecans, baking soda, baking powder, and cinnamon in a separate bowl; add to banana mixture, mixing until just combined. Pour batter into the prepared loaf pans.
-
4
Bake in the preheated oven until a toothpick inserted into the center of each loaf comes out clean, 55 to 65 minutes. Remove loaves from the pans and place on a wire rack to cool. Serve warm or cold.

Chicken French (Rochester, NY Style)
This is a Chicken French recipe I've been making for years, and it is one of my family's most requested meals. Serve with brown and wild rice or rice pilaf along with Italian-cut green beans. Garnish with lemon slices, if desired.
Bread and Butter Pudding
Bread and butter pudding is an easy way to use up those bits and pieces of bread that seem to lie around the pantry. Save a fortune and make this tasty pudding. I like to serve this with custard sauce, but it also goes well with whipped cream and ice cream or can be served on its own.
"Tastee" Sandwich
If you have grown up, lived, or traveled to the Midwest, this recipe is from a popular restaurant that was in Lincoln, NE. I've been told it's an acquired taste, but having grown up on them, I love them! It's a loose meat sandwich. Use a slotted spoon to portion out the meat. Serve on buns with mustard and sliced dill pickles.
